I had a doctor's visit last week where I was delivered some stinky news:
I am gluten sensitive.
First thought: Well, that explains a lot!
Second thought: This stinks. I LOVE to bake and am much better at it than cooking. Baking is what I do! I bake bread. Lots of it. And I bake cookies and muffins and cinnamon rolls, and cakes....all things with gluten! Needless to say, this news was somewhat depressing to hear.
And after spending time trying out recipes that involve rice flour (most of them are just not tasty) and buying some incredibly spendy gluten-free mixes and treats, I am starting to focus a little more on just finding new yummy recipes that don't involve flour of any kind.
I found this little gem-of-a-salad yesterday and not only is it healthy, but it is dELiSh!
We had it with Mahi-Mahi and coconut rice tonight. Yum!
So, I thought I'd share. :)
Jicama Salad
1/2 large jicama, peeled and cubed
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 orange pepper, diced
1 large cucumber, seeded and chopped
1/2 c. diced red onion
2 oranges, peel cut away and cut into small wedges
1/2 c. finely-chopped cilantro
1/3 c. fresh lime juice
2 T. olive oil
Pinch of cayenne pepper
Pinch of paprika
Salt to taste
Toss ingredients together and chill for several hours before serving.

that looks fabulous. Wish I still lived in mexico where jicama was plentiful and cheap!
