Mexican Pizza




Ingredients:
1/2 sweet yellow onion, chopped                                 1 c. shredded cheese
1 tsp chili powder                                                         3/4 c. chopped tomatoes
1/2 tsp ground cumin                                                    1/2 c. corn
1/4 tsp ground cinnamon                                              1/2 c. chopped green pepper
2 Tbsp. water                                                                3 Tbsp sliced black olives
1 (15 oz) can black beans, rinsed                                 1/2 c. sour cream
1/4 c. canned diced green chiles                                  1 large pizza crust
1 c. chunky salsa

Instructions:
1.  In skillet coated with non-stick spray, combine onion, chili powder, cumin, cinnamon, and water.  Cover and let cook 3-4 minutes on med-high heat over stove.  Remove from heat and add black beans and green chiles.  Take 1/2 of mixture and puree in blender until smooth. 
2.  Spread pureed bean mixture onto pizza crust followed by the salsa.  Top with 1/2 of cheese and remaining bean mixture.  Sprinkle with tomato, corn, green pepper, olives, and rest of cheese.
3. Bake in oven at 425 degrees for 10-12 minutes or until crust is golden brown.  Serve with sour cream.

Holly - this looks good. We make our own pizzas all the time (at least 1-2x/wk (but not the dough)) and I think I will have to try this next time. Although I will definitely have to leave the olives off! haha
