This trimester in school, Garrett has been taking an advanced nutrition course, which he has loved and has been a lot of fun for me when he comes home and shares all his newly-gained knowledge.
His nutrition professor is awesome and we've learned a lot about good, safe, logical ways to improve and maintain health through diet. While we actually have a pretty healthy diet consisting of homemade meals and rarely processed foods, we have become aware that there is always room for improvement.
In an effort to eat more vegetables, I've been trying out new dishes and came up with this little number after seeing a similar recipe in a magazine somewhere. We had it last night and it was DELICIOUS! I think it just became Garrett's favorite meal.
Who knew that spaghetti squash could be such a yummy alternative to pasta!?
So without further ado, I give you:

So without further ado, I give you:
Sausage and Spinach over Spaghetti Squash
(nice alliteration, huh!)

Ingredients:
1 lb turkey sausage (you don't have to use turkey, but it's cheaper and has much less fat)
1 bag fresh spinach (between 10-16 oz)
1 spaghetti squash
1 tsp oregano
1 tsp parsley
2 cloves minced garlic
2 tbsp olive oil
1-2 tsp crushed red pepper (depending on your spiciness tolerance)
Parmesan cheese
1. Bake squash in oven at 375 degrees for one hour (make sure to stab holes in it so it doesn't explode in the oven!) When done baking, cut squash in half lengthwise and scoop out seeds. Using a fork, gently scrape down the flesh of the squash from the skin to separate into stringy strands (like spaghetti!). Set squash aside.
2. While the squash is baking, fry up the ground turkey sausage in the olive oil in small little meatballs with the oregano, crushed red pepper, parsley, and garlic. Drain the excess fat from the sausage and add the spinach. Cook until the spinach is just wilted (about 2 minutes).
3. Serve the sausage/spinach mixture over the spaghetti squash strands and top with Parmesan cheese to taste. Enjoy! Sooo yummy! It makes 5-6 servings......or 4 servings if you have an appetite like Garrett's....or like mine :)

I love spaghetti squash! I thought I was the only one... this looks super yummy. I will def have to give it a try.
